Issues and Constraints | The production of Mahang Bigas is significantly dependent on procuring ingredients from local suppliers, especially for fresh goods such as coconuts and pandan leaves. This reliance encompasses personal networks, as demonstrated by the key informant acquiring coconuts from neighbors or fallen fruit, and depending on a particular rice grinder operated by a mutual acquaintance. The dependence on local sources and personal networks, although fostering the community-oriented aspect of Mahang Bigas production, may pose difficulties in ensuring a reliable supply, particularly for larger-scale operations.

Monetary Requirements | The cost of grinding rice is 20 pesos per kilogram.
Coconut grating costs 5 pesos for a whole nut using a machine.
|
---|
Issues and Constraints | In order to make Mahang Bigas, the sources state that a motorized rice grinder is used. For effective production, this machine's durability and usefulness are essential. The key informant articulates concern regarding the absence of alternate solutions should the rice grinder malfunction, indicating possible interruptions to production.
|
---|
PROCESS (FOOD PRODUCTION) | |
---|
List the step by step process of food production | - Wash and soak the rice in water for an hour.
- After soaking, put the soaked rice in the grinder with the water.
- Wait until all the rice has been grinded.
- Break the coconut in half and grate the insides of the shell using the kudkuran.
- Set aside some shredded coconut for budbod or toppings.
- Place the rest of the shredded coconut inside the bowl and add a small amount of hot water to moisten the coconut.
- Squeeze the moist coconut to get the coconut milk and strain it to separate it from the coconut shavings.
- Start with an off fire, pour the coconut milk in a pan and run it through a sieve.
- Put all the ingredients in the cooking pan or kawali.
- Mix until all the sugar is dissolved.
- Once the ingredients are well incorporated, turn the fire to medium heat.
- Stir vigorously until the mixture has thickened.
- Using a sandok, place the mixture in the bilao lined with banana leaf.
- Let it rest and make the budbod.
- For the budbod, put the freshly grated coconut and brown sugar in a pan.
- Mix until golden brown and crispy.
- Using a spoon, put the budbod on top of the rested Mahang Bigas.

Monetary Requirements | Mahang Bigas is sold at a price of 10 pesos per piece, 60 pesos per tub, 300 pesos for a small bilao, and 400 pesos for a large bilao.
|
---|
Issues and Constraints | Mahang Bigas is unsuitable for prolonged storage and is best enjoyed fresh because of its coconut milk content. The gata (coconut milk) is prone to rapid spoilage, particularly at room temperature.
Reheating leftover Mahang Bigas is inadvisable, as it may compromise the texture and flavor, diminishing its palatability. It is optimally savored when served chilled or at ambient temperature. However, if necessary, the key source stated that warming in a microwave is an option.
|

PROCESS OF FOOD STORAGE | |
---|
List the step by step process of food storage | - Excess Mahang Bigas is placed inside a tupperware or a plate covered by another plate.
- Then stored in the chiller.
