Issues and Constraints

Marjorie A. Remolona has encountered difficulties in finding affordable kitchenware to prepare Sinukmani. This dish necessitates using wooden spoons, as they are more durable than plastic or metal ones. However, the prices of wooden spoons in commercial stores have increased; as seen in stores, the price for two wooden spoons has now become PhP 300.00, making it quite expensive. This results in the inability to purchase the necessary new tools.

PROCESS (FOOD PRODUCTION)
List the step by step process of food production
  • Prepare the banana leaf by heating it on direct flame; remove it once shiny.
  • Wash the sticky rice and cook in a stainless steel pot along with water that is twice its weight.
  • Grate the coconut and add water to the shredded coconut to get the coconut cream.
  • In a Tulyase, add ¼ of the brown sugar and heat it until it is dark brown.
  • Once the brown sugar is dark brown, it is time to add the coconut cream and the rest of the brown sugar, then heat it until thick.
  • Once the mixture is thick, add the cooked sticky rice and mix thoroughly until there is no more liquid.
  • Transfer the mixture onto a Bilao for it to cool, and cut diamond shapes.

Issues and Constraints

Sinukmani can easily be spoiled as coconut cream spoils easily when exposed to sunlight because the heat accelerates the growth of bacteria and causes oxidation of fats leading to the separation of texture.
