Issues and Constraints

A negative factor affecting the people of Sampaloc is the rising inflation rate. Inflation refers to a general increase in the prices of goods and services over time. The cost of goods has been increasing over time, thus becoming a struggle for the local people of Sampaloc to afford the ingredients needed for Hardinera.

Additionally, the limited availability of pork in Sampaloc, Quezon, particularly after the morning market hours, is primarily due to the small-scale nature of meat vending in the area. Sampaloc’s local economy and market infrastructure rely heavily on a few individual meat vendors who source their pork from nearby suppliers.

The key informant highlights that transportation is a significant challenge, particularly during inclement weather. It is noted that accessing the town market becomes difficult when water levels rise, hindering the procurement of necessary ingredients.

Susan also mentioned that when she cannot find the necessary ingredients in the market, she travels to Lucban, Quezon, to procure them specifically for making Hardinera.

Moreover, Monosodium glutamate (MSG), also known as vetsin, is extensively utilized in Filipino cuisine to augment flavor, although it is associated with several health risks. Certain individuals exhibit symptoms such as headaches, nausea, or chest pain following the ingestion of MSG, a condition referred to as "Chinese Restaurant Syndrome" (Bawaskar et al., 2017). Residents such as Marjorie favor the usage of vetsin in their meals, as they believe it increases flavor, hence raising health concerns for individuals in Sampaloc.
