| PROCESS (FOOD PRODUCTION) | |
|---|
| List the step by step process of food production | - In the morning, they source various cuts of meat from pork and chicken from the public market in Catbalogan based on an estimated daily requirement.
- They boil the pig head until it becomes tender and after that they are cut into small pieces.
- The marinade is also prepared using their undisclosed barbecue sauce, white vinegar, and other seasonings. The meats are then marinated for hours to infuse flavor.
- The special barbecue sauce is also prepared, the exact recipe is undisclosed but it has the same ingredients as the marinate except for the vinegar.
- After marinating, they are then skewered into bamboo sticks and stored in the refrigerator until it is time to grill.
- Once they are about to open, they set up their stall, display the meats.
- Grill until cooked in a stainless steel griller and serve it to the customers.
