Issues and Constraints | According to the key informant, Pier Uno is their leading supplier of mussels, but they will also buy from other suppliers if needed. This suggests that the amount of mussels available at Pier Uno is only sometimes reliable or adequate to satisfy their demands.
A red tide occurrence would totally stop the mussel supply in the waters surrounding Pier Uno. With this, the Baduya Nga Tahong will not be available, and the Tahong Shanghai will be substituted by Pork Shanghai.

PROCESS (FOOD PRODUCTION) | |
---|
List the step by step process of food production | - Baduya Nga Pasayan - Mix the shrimp, eggs, salt, pepper, onions, and spring onion in a large bowl. Sprinkle in the flour and mix well. Add the water and fold gently until smooth.
- Heat the cooking oil in a frying pan. Drop tablespoons of the mixture into the hot oil in batches. Fry until golden brown, then flip to cook the other side. Frying takes about 5 minutes total. Drain.
- Serve with spiced coconut vinegar.
- Baduya Nga Tahong - Combine mussels, eggs, salt, pepper, carrots, onions, and spring onion in a large bowl. Sprinkle the flour over the mixture; mix well. Add the water and fold the mixture until blended.
- Heat the oil in a frying pan or wok. Scoop a spoonful of the mixture and drop the patties into the hot oil in branches. Fry until golden brown, then flip to cook the other side. Frying takes about 5 minutes total. Drain.
- Serve with spiced coconut vinegar.
- Lumpiang Tahong - Heat ¼ cup of the cooking oil in a frying pan. Saute garlic followed by onions. Add the mussels, then add the carrots. Season with salt and pepper; mix and turn off the heat. Put the mixture in a sieve to drain excess oil and liquid. Allow to cool.
- To wrap, place 2-3 tablespoons of the filling on each lumpia wrapper. Fold in the sides of the wrapper and roll tightly. Seal the edges with water. Repeat until all the filling and wrappers are used up.
- Heat the remaining cooking oil in a frying pan. Fry the lumpia until golden brown. Drain.
- Plate and serve with a dipping sauce of spiced coconut vinegar.
- Pritong Saging - Peel the bananas and heat oil in a pan.
- Deep fry the banana. Drain.

Issues and Constraints | The sources stress that unsold cooked fritters are eaten at home to reduce food waste. They say nothing about how to get rid of other possible waste, including damaged food or leftover batter. This lack of information makes it challenging to evaluate the stall's sustainability practices as a whole.
Although the shop initially wraps takeaway orders with brown paper, they eventually utilize plastic bags, which may cause environmental issues.

PROCESS OF FOOD SERVICE | |
---|
List the step by step process of food service | - A La Carte Service
- Take out
- When ordering, customers write down their orders on a sheet of paper that the stall operators supply, indicating whether they are for Takeout or dining in. This procedure was implemented to avoid misunderstandings and mistakes when fulfilling orders, particularly during busy times.
- Fritters are prepared in advance, replenishing cooked fritters every few minutes.
- For Dine-in, the stall takes extra care to improve the presentation and maintain a hygienic serving surface. To achieve this, they serve the fritters on plates lined with Manila paper, which is a clean and eco-friendly substitute for banana leaves. This not only enhances the visual appeal of the dish but also ensures a safe and enjoyable dining experience for their patrons.
- For Takeout, fritters are first wrapped in brown paper to absorb heat and stop the taste of plastic from leaking into the food. After that, they are put in plastic bags for clients to transport.
