PROCESS (FOOD PRODUCTION)
List the step by step process of food production
  • Baduya Nga Pasayan - Mix the shrimp, eggs, salt, pepper, onions, and spring onion in a large bowl. Sprinkle in the flour and mix well. Add the water and fold gently until smooth.
  • Heat the cooking oil in a frying pan. Drop tablespoons of the mixture into the hot oil in batches. Fry until golden brown, then flip to cook the other side. Frying takes about 5 minutes total. Drain.
  • Serve with spiced coconut vinegar.
  • Baduya Nga Tahong - Combine mussels, eggs, salt, pepper, carrots, onions, and spring onion in a large bowl. Sprinkle the flour over the mixture; mix well. Add the water and fold the mixture until blended.
  • Heat the oil in a frying pan or wok. Scoop a spoonful of the mixture and drop the patties into the hot oil in branches. Fry until golden brown, then flip to cook the other side. Frying takes about 5 minutes total. Drain.
  • Serve with spiced coconut vinegar.
  • Lumpiang Tahong - Heat ¼ cup of the cooking oil in a frying pan. Saute garlic followed by onions. Add the mussels, then add the carrots. Season with salt and pepper; mix and turn off the heat. Put the mixture in a sieve to drain excess oil and liquid. Allow to cool.
  • To wrap, place 2-3 tablespoons of the filling on each lumpia wrapper. Fold in the sides of the wrapper and roll tightly. Seal the edges with water. Repeat until all the filling and wrappers are used up.
  • Heat the remaining cooking oil in a frying pan. Fry the lumpia until golden brown. Drain.
  • Plate and serve with a dipping sauce of spiced coconut vinegar.
  • Pritong Saging - Peel the bananas and heat oil in a pan.
  • Deep fry the banana. Drain.
